SKYBORRY CIDER

These Welsh ciders are some of the finest we have ever encountered. Adam and Dani make Cider, Perry and a bit of apple juice in a small shed nestled in the side of the Teme Valley a mile upstream from Knighton, Powys.

The fruit from this year was all hand harvested mainly from an orchard in between Hay on Wye and Bredwardine, Herefordshire before being Milled, macerated, pressed, fermented and bottled in their shed in Knighton.

Once milled they let the pommace stand to macerate in open top containers for 24-48 hours before pressing, then the wild yeasts do the fermenting. Their ciders are made like pet nats, with residual sweetness achieved by racking the cider off its lees throughout the winter months. This slows the fermentation down enough so that when it is bottled it continues fermenting giving it carbonation but still leaves sugars present. This cider making technique is called Keeving. 

 

Pommage 2018.

Older trees than the previous orchard (around 60-80 years) and a few different varieties that they had not pressed before. The Orchard is in good condition having spent the last 20 years managed organically for Dunkertons.

This is a blend of Browns (sharp), Stoke Red (bitter sharp), Yarlington Mill (Bittersweet), Harry Masters Jersey (Bittersweet), Chisel Jersey (Bittersweet) and a little Michelin (Bittersweet). All Apples apart from the YM came from the Hay on Wye Orchard.

 

Rural Method 2018

From the same Orchard as the Pommage, with a different blend. The acidity comes from the Foxwhelp which is one of their favourite Apples. Its citric like acidity brings life to a blend like when you add a squeeze of lemon to a fruit salad. Varieties are Foxwhelp (bitter sharp), Dabinett (Bittersweet), Chisel Jersey (Bittersweet), Ellis Bitter (Bittersweet) and Browns (sharp).

 

Waiting For The Miracle 2018

Perry. (Pear cider) This is a medium sweet sparkling Perry made from the Blakeney Red pear. The pear originated from the village of Blakeney in Gloucestershire, however the trees harvested are in Orleton, Shropshire just outside Ludlow.
